Pumpkin Pancakes

Ingredients

  • 3/4 cup Arrowhead Mills GF oat flour pancake and waffle mix 
  • 1 scoop Truvani protein (pumpkin spice, vanilla, or vanilla chai flavor)
  • 1 egg
  • 1.5 tbsp maple syrup 
  • 1 tsp vanilla 
  • 2.5 tsp pumpkin spice
  • 1/2 cup pumpkin puree
  • 3/4 cup water 
  • chocolate chips, butter, and as much maple syrup as you like to top

Directions

Step 1

Preheat pan on low-medium low on stove 

Step 2

Mix all ingredients together in a bowl until thoroughly combined

Step 3

Cook pancakes on pan, flipping when bubbles pop through to the top

Step 4

Place chocolate chips on cooked side of pancake after flipping, while the other side continues to cook.


*you can mix chocolate chips into the batter but often the chocolate ends up burnt so I like to do it this way

Step 5

Once both sides of the pancake are cooked, place on plate, top with butter and maple syrup and enjoy.
