Chocolate Chip White Bean Bars

Ingredients

  • 1 can (14.5 oz) Cannellini beans
  • 1 cup white sweet potato (skinned and boiled until easy to mash)
  • 2 eggs
  • 1/3 cup maple syrup 
  • 1/3 cup coconut oil (melted)
  • 1/2 cup hemp seeds
  • 2.5 tsp vanilla
  • 1 tbsp cinnamon or pumpkin spice seasoning
  • 2 tsp baking soda
  • 1 cup flour (I use oat flour or Arrowhead mills 1:1 GF all purpose flour)
  • Dark chocolate chips (as much as you want ! but 1/4-1/2 cup should be plenty)

Directions

Step 1

Preheat oven to 375 degrees F. Line glass baking dish with parchment paper (any size between 9x9 to 9x13 will work)

Step 2

Put all ingredients except chocolate chips into food processor and blend until smooth. 

*if using a standard blender leave out chocolate chips AND flour

Step 3

If using a food processor, add chocolate chips and pulse for 3-5 seconds.  If using a blender, pour into a mixing bowl and fold in flour and chocolate chips. 

Step 4

Pour batter into parchment lined pan and top with a sprinkle of chocolate chips. 

Step 5

Bake for 25-35 minutes or until lightly golden on top.  At 25 minutes, use toothpick or fork to check the center.  If it comes out with wet batter sticking to it, bake for an additional 5 minutes.  Repeat until thorough baked. 

Step 6

Let cool slightly and enjoy ! 

NOTES

  • This may be kept on countertop covered with foil or in fridge
  • Does not need to be reheated to be enjoyed but can be warmed in oven or toaster oven for a few minutes before eating 
  • this is not only a great every day snack for all ages, but is also a very supportive snack during a woman's luteal phase
